I’ve had this idea floating around in my head for ages: coating watercolour paper with photographic emulsion and then developing the whole thing in lith developer... Has anyone ever tried this? Is it even possible? I’m wondering, of course, because the paper does end up sitting in the developer for a very, very long time, or rather, it stays wet for a long time. Would such a treatment even work? Or should I protect it somehow? Are there even emulsions that work with lith printing?

Yes, it works; I’ve already performed coating and exposure on various papers and even eggs, and conducted the development... the problem is that the emulsion isn’t very hard, so it’s recommended to use a stabiliser additive in the developer...
