I’d like an electronic thermometer that takes readings really quickly. Basically, one that shows the temperature almost immediately when you dip it into the liquid.

Real-time measurement is expensive. As a fairly quick measuring device, I use this one:
http://www.phototec.de/catalog/product_inf...roducts_id=1086 (please excuse the link to a competitor’s product here; I don’t have another one to hand). It is calibratable and can therefore be traced back to my calibrated glass thermometer.
I don’t use it in the wine shop, though. I don’t need the speed there; even self-calibrated wine thermometers from Fackelmann in the supermarket (costing 2.99 if you ground them) are enough for me. I use one of the Greisinger units as a meat thermometer in the kitchen and the other in chemistry.
